Rabdi

1 cup full whole fat milk, 1/2 cup sweetened condensed milk , 3/4 cup paneer grated, elaichi powder , saffron little bit. Microwave it for 2 mins and stir it . Again do it for 2 mins and stir it and do again for 2 mins . And then let it cool and store in refrigerator . Garnish with almonds , pistachios

For 15 people use 5 cups of milk and change the ratio of the other ingredients accordingly. And pls use unsalted paneer!!

Pineapple ice cream - takes 5 min to mix stuff and rest freezing time. Mix cool whip, crushed coconut( drained from can), condensed milk… u may add saffron and almond powder(both optional)...freeze. Use proportion based on how sweet and rich you like.. I use one can condensed milk, one can crushed pineapple( alb 4 oz) and cool whip( 8 oz). Yummiest ice-
cream.

So here it is. 1 cup butter, 2/3 cup sugar, 1 teaspoon baking powder, 1 teaspoon orange zest (optional), 1 tsp vanilla, 1/4 teaspoon salt and 2.25 cups all pupose flour. Mix everything well in a big bowl. Refrigerate the dough overnight. Shape the dough however u like. I made a log shape to get a oval shape. Wrap it in thin film before refrigerating. Next day, take the dough out, with a shap knife, cut it very thin. Oven at 350, keep them till you see golden edges. I sprinkled mine with cut pistachio before putting them in oven. You are free to experiment. Good thing is you can store the dough in fridge for a month, so every batch can be fresh or you can bake them once and store in airtight container.

1 1/4 cup of raw cashews.
1/2 cup sugar.
1/4 tsp ground elaichi.
3 tbsp water.

Method:
grind the cashew to fine powder.
pour the sugar in a pan and add the water to it.
bring it to a boil on a very low flame.
then add the powdered cashew and elaichi to and stir constantly on a low flame.
it takes about 7-10 min.
test the consistency by taking a small amount aside to cool and check if you can roll it into a ball.
if you can turn off the heat.
grease a plate with some ghee and pour the mixture and stir it little to let it cool.
once it cool and you can handle it roll it and spread it to desired thickness on a parchment paper.
you can grease it a little with ghee again and let it cool for 10-15 min and cut.

3cup maida
3 butter sticks softened I.e. 11/2 cup

1/4 cup fresh orange juice
11/2 tbs orange zest
1cup Tutty fruity
1/4 teas Salt
1/2 teas Baking pwd
3/4 cup of sugar

Beat sugar n butter together, add juice, zest,salt and baking pwd..mix it and than add maida- half at a time and beat it on low speed.
Add tutty fruty and mix it well. Form 2 ich diameter rolls and either freeze for half an hour or refrigerate for 3-4 hours or overnight and than cut into round shape and bake on 350 degree F for 15-20 min or until edges are golden brown.
Let it cool and store it.

Ingredients:- 
2 cups sugar
1-3/4 cups all-purpose flour

3/4 cup cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water

DIRECTIONS:-
1. Heat oven to 350ºF
2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt on large bowl. Add eggs, milk, oil and vanilla extract; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
3. Bake 30-35 minutes or until wooden pick inserted in center comes out clean.



Milk cake 
The ratio is always 3:1
3 bowl milk ( katori any size on how much quantity u want)
using the same bowl now 
1 bowl milk powder
1 bowl sugar
1 bowl curd
1/2 bowl ghee
Heat milk,once it starts boiling put sugar ,milk power one ater another ,stirring the milk ,then add ghee 
mix the curd at the end ,which will help in Curdling of milk,Now cook till all the water evaporates and u will be left with the cake mixture ,make sure to keep stirring the mixture so that it should not get burnt. 
Keep it in a casserole overnight to get the desired color. Cut into pieces.


ry bread pudding. It turns out delicious. To go with this you can make sauce with..unsalted butter, half n half, sugar and toasted pecans. just boil these ingredients and simmer for 10 mins..pour over bread pudding just before serving.
